Carbon build up will increase compression ratio but will also impede gas flow. A well set up engine isn't going to build up much, if any, carbon so it hardly matters. When the top end comes off for 'decoke' the job done that actually matters is the valves are reground to prevent loss of compression.

As to which petrol you use?

You'll never be able to tell the difference at this level of racing.
