Palmersport at Bedford is indeed an amazing day, and yes, you can go flat out within the confines of the circuit. Superb cars on the whole, including some heavy weight stuff like Porsche, and racing stuff like Caterham and Clio Cup (close). Then the single seater and LM type sports car. I'll never forget my day there, being encoaraged to go for an overtake in a sports car, or braking from about 130 in an XKR, before barrelling through a chicane, etc, etc...
