the curve should be just that... a curve.
Your posted dyno pic shows a dip at around 4,750 revs per min. This is flat spot is bad for acceleration and will feel like a hand on your chest when driving the kart.

The vertical scale of the graph hides the extent of the flat spot and a better graph would openly show how much the flat spot is dipping compared to another engine/the same engine with different settings.

-as for how can it be sorted.... that is the art of tuning and surely you cannot expect me to help further by giving away my hard earned knowledge.
