I'd try rotating the seat a bit...
Try a longer steering column...
Try angling the pedals to give a bit more length, this may require a plate on the throttle cable mounting point to effectivly extend it...
Going shorter on the chains could cause weight distribution issues. 2 x GX160 is the best part of 30kgs, it makes a difference moving them back and forward!
I can only give good advice on the 7 Kart, but basically you need to run them with the engines are far forward as possible as an example. Other chassis will like other things, but I'd generally tend to run any kart in a similar configuration. Get the heavy items as close to the center and as low as possible.
Getting the driver in the right place is more important than the motors. I'd check with Jeff (prokart engineering) and see where he sticks the seat and work from there.
