Either by running the engine on track or on a dyno under load. Have not tried anything else, but would think it very difficult to replicate running conditions using another heat source such as an oven. My opinion is to run the engine(or new head) straight out of the box for about 5 hours then get the valve seats recut and lapped. if you try to correct as you go it wears the valves too much so they have to be replaced.
