The most important thing is to ensure that both throttles are opening fully - look at the actual throttle arm coming out of the top of the carb and make sure it goes fully to the stop.
Ensuring that the engines are matched in terms of performance (which can only be done on a dyno) is a good idea, as is balancing the engines. This can only really be done for the initial pick-up before the clutches are engaged (unless of course you attach two rev counters and run the engines with the chains off - unnecessary...). Best way in my opinion is by standing behind the kart and listening/feeling the exhausts as an assistant slowly presses the throttle pedal. With experience and a trained ear you will hear / feel if one of the engines is picking up before the other and be able to adjust accordingly. Don't forget to re-check full throttle opening after any adjustments though, and also check this regularly through any meeting as I have found, to my cost, that it can change.......
