T8 Standard will be fine for a prokart. Stiffness is not a major issue, however, position can be. Someone on here might be able to give you some position measurements for your chassis. Otherwise, borrow two sets of kitchen scales and two lenghths of timber and look to achieve 40:60 weight distribution. Also, have the seat bottom level with the bottom of the chassis rails (As I recall Tillett had some guide to seat fitting on their web site). For your taller driver it is always going to be a compromise but you can tilt the seat back. This will not only create room for longer legs but also rear clearance for the engines.

73 isn't that big a sprocket but there is nothing to stop you using shorter/longer chains to keep the engines around the optimum position. This can be achieved with a simple chain splitting tool.
