You hold the sprocket using a special sprocket spanner, here: http://www.spellfame.co.uk/acatalog/copy_of_TKM_Tools___Accessories.html 5th picture down :)

The carb settings don't change, the idle speed does, i believe you bring it down slightly to stop the engine 'pushing on' in the corners when you fully close the throttle

How exactly were you starting it with a starter? on the stand? As when you start it on the stand they run completely differently to when its on the track, as i found out a few times :)

Pop off settings, no idea :)
