Over many years on different classes, I've always found pop off at 10 and hold at 5.

Remember the higher the hold and pop off and hold, the longer it takes the carb to supply the engine with fuel. Simple logic.

The lower the pressures, the quicker the engine gets the fuel. But when testing these pop off and holding pressures you always need a instant reading. the longer the wait for the reading the worser the performance of the carb. If you think about it if you have a quicker pop to hold pressure, the faster and better delivery of fuel to the engine! This will also help the ignition timing of the engine.
