A plug chop is simply where you accelerate to max speed down the straight then kill them ignition to prevent anymore firing of the plug , remove plug to see the colour it attained during the max rpm burst to see a truer reading than if you coasted to a standstill in the pits where you will then be reading the mixture colour at idle not full speed..
Also check exhaust baffle insert as they are known to break along their length and block the exhaust passage .
