I haven't driven an IAME but I've driven a Honda and a Junior Rotax so I'll try and sum up as best I can.

As you said a two-stroke will rev higher and usually build revs quicker when they are in the power-band. They won't have the same torque and push out of the corners as a 4-stroke however and they will accelerate very badly if the revs get to low.

Keeping the revs up through the corner will be the main thing with a 2-stroke, much like the Honda, the speed comes from keeping up momentum and in an IAME you don't have enough power to really spin the wheels or anything so keeping corner speed up and having the gearing set correctly will give you the biggest time results.
