If it was running ok in the race you are probably about right on carb settings. You could try a bit leaner on the low i guess.

It took me a while to get the rolling starts right and I had a similar problem and found it was technique and a balance between keeping enough gap to the guy in front so you could control your throttle and keep your engine where it feels like it just wants to go, its almost like a coiled spring waiting to unleash its energy and a gentle feed in of the throttle i found worked for me.

Thats probably an awful description and apologies if I am teaching my granny how to suck eggs.
