Minimax Practise Time v Race Time

a little confused after what we thought was a good practise day we seemed to be on the pace against certain other drivers and even faster than others but the following day we where a good half a second off there pace. Track and Weather conditions were similar. Also our team mate experienced the same however he was on pace with the fastest the day before but again was good half second off pace on race day. How would this happen, do they have practise engines because cant understand where they just find that extra pace,
