Basically it is believed that the 12.5 is better on 'top end' tracks and the 8.5 on tighter twisty tracks, however a well set up 8.5 jetted correctly will always out perform a 12.5 if it is not perfect.
The biggest gains are found in set up as well as testing several carbs to find the best, some offer poor performance due to manufacturing variations, mostly though it is as I said poorly prepared and set up carbs that are the culprit not the fact that the venturi is marked 8.5 or 12.5.
