To add to what karter212000 said,

Temp = 55-60C

2 Jet Ibea = 1.5 turns on low jet, 1.25 on high jet, if you want to alter, place hand in front of airbox opening whilst going down a straight (not over the holes, just hinder the air flow), if you feel a surge i.e. going faster) richen up the high jet, if you feel it go significantly slower i.e. bogging, lean it off a little.

Bleeding = I can't remember if the Parilla had a bleed hole in the top of the head, if it did use that, if not take chain off, tilt kart so radiator opening is high (with cap off about 45degrees) and turning the rear wheels to drive the pump so it pumps round and the air comes out.

Anti-Freeze = Never ran antifreeze myself at euro or british level but I'm sure it won't hurt and will aid in protecting the water jacket in the long term.
