The Aim software (Race Studio) is capable of producing track maps from GPS or wheel speed and G data. Not done it for a while, but it's fairly straight forward using the latter.

The acceleration and braking points are just derived from the speed trace, in fact you can derive longitudinal aceleration fairly easily as well.

Once yu've done it all, you'll find that track maps are a bit of an over-rated tool in data acquisition... You can learn an awful lot just from the speed trace.
