31 plug is fine it is a cooler plug. Water temp is way too hot and lucky it has not seized,but check the temp probe and lead etc as they can start to fail and read way above what it actually be.
Also batteries in what you are using can have a effect as well when they start going low. Check all those things first.water pump problem can also need checking and the thermostat as well if the others are ok.
