Do I need a water temp sensor?

I have an old ICA water cooled moter and have everything i need other than the coolant fluid or a water temp sensor & gauge.

What coolant should i use - will standard car radiator water / coolant suffice?

Do I need to run with a water temp sensor and if so does anyone have a link to a cheap one with a gauge?
