I think the problem is more than likely too rich. The formula on the website will be good for a starting point not definitive. Try going a size or two down on the main jet.

The booting the throttle out of corners wont be a factor in this. If you boot the throttle in a Rotax, because the carbs are so bloody huge it just floods the engine and takes a few seconds to pick up again. It wouldn't explain needing to back off the throttle halfway down the straight I wouldn't have thought.
