Obviously having fun is key but don't be afraid to explain technique or correct mistakes.How you tell them is as important as what you tell them.
I try to avoid shouting and showing frustration and focus on the positives like how well they have taken a bend then say try that line on a similar bend which they are struggling on.
I also watch other drivers with my kids and point out the difference in driving style lines braking etc.
Also speak to other parents and get the kids talking to eachother they can learn a lot from more experienced drivers
