The mychron 4 water temperature sensor uses a thermistor- most thermistors have a negative temperature coefficient ie the hotter it get the lower the resistance. A low temperature reading therefore suggests that there is a high resistance in the circuit- could be a dirty contact in the head unit or a dry solder joint on the circuit board- Did you try it with the another temperature sensor? Some early versions of the firmware were a bit buggy have you updated it with a datakey- If you haven't got a datakey I'm sure someone at a track will do it for you - only takes a minute. I would clean the micro DIN sockets first- A blast of brake cleaner followed by a squirt of WD40 should do the job.
