definitely bend more easily, usually too much and fail to straighten! However on certain circuits soft axles do help the kart to release out of the corner and reduce rear grip. Likewise soft axles do not appear to be benificial in the wet, yet one usually takes the seat stays off in the wet. Explain that!
Much can be achieved using different length hubs, moving them in or out, front and rear.
Changing 30mm axles used to be a nightmare, but 50mm axles can be changed in 10 minutes or less, and frequently are.
It's why karters spend a day and a half testing before big meetings.
