This is a skill they can learn when they are ready - having got to grips with all the basic kart control. The danger comes when parents decide that their 8 year old should immediately be winning all the races and try to force the pace. You can learn carb adjustment off the track - at home sit them in the kart and get them used to adjusting the jets without looking. That way they will not damage the engine, don't have to take their eyes off the track - it is safe. Once they can do it at home then get them to try it on the track. Maybe they will be a bit slower for the first few months but at 8 years old they have loads of time to learn their craft.
