Ian,

It's simple. Slow, bunched up starts create the perfect conditions for loading and make spotting it much harder. The more karts in a bumper to bumper train, the more karts there are to load up.

Fast rolling starts alleviate this because the karts are more spread out.

Standing starts go a step further because the karts arrive at the first corner even further spread out.

Those are the facts borne out by evidence. When you have evidence (and not hand-waving) to the contrary, feel free to present it.
