Neither of those methods centre the steering although they may be "good enough" for you.

To properly centre the steering you need a reference plane along the centre line of the kart (at the steering column). Some lasers include this in the kit. Otherwise a piece of card can do the trick. Some experienced mechanics can do it with their finger.

Steer the kart to the right until the stub axle goes back the other way. Mark where the laser hits the reference plane. Steer to the left and do the same for the other side. If the steering is centred they will intersect at the same point. Adjust until they do.

You might end up with loads of toe in or out but that doesn't matter yet. With this done, straighten the steering wheel until the toe reading is the same each side.

Your steering is now centred.

Now adjust to the desired toe setting by adjusting each track rod by equal amounts.

You don't have to centre the steering this way every time but it is worth checking from time to time.
