I've never raced at Ellough but a rough rule of thumb for gearing is to add around three teeth to your mini-max set up. Have a look at this site:

They are recommending 12 * 83. Does this look any where near your original gearing plus three?

As for jetting, start out on a 158 & work from there. You wont be far away if you are using a K27 needle.Conditions on the day may dicate adding - subtracting fuel but at least the Junior set up will 'pop' if you are too lean
