Hi, can't say I have ever done this but I am aware there is an infra-red thermometer that is used to check food temp without being invasive like a probe. It is gun shaped and you just point it at what you want the temp of and pull the trigger to get a reading - would this be any good?
Not massively expensive either - about £20 to £30 if memory serves and you can get them calibrated if need be to ensure their accuracy
