That seat position will be fine...... so long as you remain within the 'correct' weight distibution (front to rear) on the kart.... and that will depend on what 'shape' you are.... and that's NOT only controlled by your 5'10" height.
I, too, am 5'10" and I am willing to BET that our weight distribution in the same kart would be different (I am an old, fat and short legged 5'10").

You will need to decide who seems the more likely to be 'correct' for YOU of the two methods (fixed measurements for EVERY body shape, or a method which takes body shape into account)
I accept that it's not easy to decide who will be 'right'. The manufacturers know A LOT more about their kart than I do (that's not too difficult) and if you are the 'standard-quick-karter' shape (short-skinny-little-runt of the litter), then the manufacturer's method of seat positioning will be spot-on...... however, if you are quite as far away from short-skinny-little-runt as I am.....
I offer my method as an alternative....
