First welcome to karting, good luck and I hope you and your kids enjoy it.
Track time is the best way to learn.
You should be reving to at least 13.5k at the end of the straight. Not sure what spocket you'll need at rye house
I think its important to keep it simple when your kids are just getting started.
Trying to think what I would do... keep the same setup say 12psi and mid track width front and back, however tempting it maybe to change things around keep to this until they are a little bit quicker.
The driving instructions need to be simple, there is no point in stuffing them full of little gems, if you know what i mean.
Brake in a stright line, before turning into each corner. Drive round the inside of the corners. Enjoy!
Remeber there is a lot of bull spoken so do what makes sense to you.
Then theres the basics like, make sure you are mixing your fuel correctly, use chain lube before each session.
I would set a target of being within 3 seconds of the slowest novice or doing 5 laps consecutively within 1 second.
Good luck!
