Yes, castor/camber top hats should work, I understand what you say about not remaining parallel but that's the same if using them for their intended purpose. I guess they work on the theory that the spacers top and bottom of the stub are only acting on the inner race of an 8mm bearing so 1or 2 degrees over about 12mm isn't much and if the spacers are alloy they will probably deform enought to clamp fully up.
Not great in a truly enginering sence but neither are several other features of kart enginering BUT in the real world they'll work
