We never normally found a big issue with the sprocket contacting the track / kerbs in terms of the chain coming off. What we did find is if you use a double sprocket protector the chain can't come off unless it breaks from wear or poorly adjusted. We have had chains off before using double sprocket protectors but nearly always when the opposite side of the kart to the sprocket struck kerbs. Apparantly the shock down the axle can through the chain off. with a properly spaced double sprocket protector the chain has nowhere to go and falls back onto the sprocket if it is thrown off by the shock. In over two seasons of racing we never lost a chain with double sprocket protectors and my lad was a bit of a kerb bandit. before that always losing chains. Make sure you space the sprocket protector so there is less than the width of the chain between the protector and the sprocket to stop the chain going down the side of the sprocket.
