With a new bore and piston I would set up slightly rich as buzzin suggests but take it to 12000 in the first session, however it is important to not hold it at the 12k. So up to 12k back down up to 12k and back down and so on. The next session up to 13.5k, again not constant revs. The next session again running the engine through the rev range with slightly higher revs and slightly leaner . The final seesion normal jetting normal revs but again trying not to hold max revs.

Normally about 30 mins with new piston and bore slightly less if just honed and a new piston.

Also talk to your engine builder as the bore/piston clearance he has allowed for can make a big difference.
