Just let Ebay sort it out for you. Everything is done automatically for you, Ebay will automatically chase them for payment after a set time frame, if the buyer doesn't pay then they will get an unpaid item strike against them and you will get your fee's refunded. Then you just hit the relist button.

It's quite rare these days that a buyer doesn't pay for the item, let Ebay do the work for you, that's what they are there for and what you pay them for.
