The way Ian has suggested (i.e. using the BCC field) is fine, but all the email addresses are sent to every recipient. They don't show up in the recipient field, but they are available to anyone who knows what they are doing.
The absolute best program to do this is GroupMail. I believe there is a free edition. The paid for addition will clean-up your email database, track who opens your emails, allow for opt-in and opt-out (subscribe/unsubscribe) and many more features. It sends each email individually. Using my own server, it is able to send about 3500 emails in about 5 minutes.
If you are using your ISP's mail server you may find it limits you to a certain throughput. I'm pretty sure GroupMail handles this too.
If you have your own server, you could also consider MailEssentials. This program is the best anti-spam software available as well as incorporating a mailing list server.
