Does sound like the thermocouple. This is a concentric bi metal device with one end soldered that creates an electric current when this end is heated (the bit in the flame) which in turn holds a solenoid open for gas flow (taking over from your manual input). Replacing this should not usually require the breaking of any gas tight joints.
An alternative device might be a bimetallic spring. This is a 'U' shaped bimetal strip which sits horizontally, with the curve in the flame; the open end opens further as the curve is heated, operating a plunger to allow gas flow. More commonly used on water heaters but also usually replaced without disturbing gas tight joints.
If you want to test for gas leaks, I'd suggest replacing raceinstructor's match with a weak solution of washing up liquid or a proprietary leak detector - or call in a professional - exploding caravan in paddock might not be popular.
