There's a difference between defensive driving and the blocking we see all the time today.
One of the reasons we don't see the old slipstream and outbrake move these days is because the overtaker promptly gets his nose chopped off and has to lift and move to the outside (which is bad enough), only to find the overtakee has moved back to "retake their line". All of this being classed as just "one move". It's nonsense and simply isn't racing.
As RoadRat says, you don't see too much of this in karting because the overtakee quickly learns that doing so is a quick way to end up in the gravel (or on your head). We also don't have mirrors allowing us to cover any moves those behind us make. Most Karting incidents are a result of desperate lunges from behind or a simple professional foul.
