I believe some have a clutch peddle and some have a clutch paddle (on the steering wheel). Depends on driver preference (i'd prefer a paddle rather then a peddle, because of my 125 gearbox and motorbike experience).

I do have a dial on the steering wheel which decides clutch bite point and a button to find where it is. They can also alter the torque map from the steering wheel. They would tend to choose an aggressive torque map for the start of the race, then tone it down as the tyres wear. So they have some control, but Jarno has been saying people are cheating since he was in karting.
