From what I have read 1. Ideal max revs would be in the 5900+ area on top & around 3500 at the lowest (depending on engines) 2. if you have had a 20 x 68 on & got 5780 revs go to 69, gearing is gearing, its all about the “ratio ?” to 1 not how many teeth are on the front or the back. 3. on average 20 teeth on the clutch, each tooth added to the rear sprocket increases revs by about 100 rpm 4. sprockets are cheaper to buy than clutch drums, I have never used anything other than a 20 tooth clutch 5. every 3kg is worth 0.1 of a second, if you are 0.5 or 0.6’s behind the front runners you are on pace at 15kg over. At the start of a run you will weight over 200 kg fully fuled.
I hope this helps, these are not absolutes just “rules of thumb” to make working out gearing easier & give you an idea of what pace you have relative to others.
