Am I right in thinking the GX200 head gasket is to compensate for not adjusting the cam timing or torque honing. Thus making the engines very quick and cheap to prepare, but still capable of staying with fully prepared engines.

Credit where it's due, a great idea for pool engine.

Would be good if you could dyno each engine and then pair them to all be equal overall. Best with the worst and so on.
