I think you are probably correct with the oil level. 450ml is a safe amount and that will probably only come to the bottom of the threads on your dip stick hole.

I don't see the new carb on its own as being an issue with fuel in the oil. Do you still have the top tank's mounted on the engines? I have seen fuel run through the carb and into the cylinder through an open inlet valve in the past and if your seal at the rings is not perfect (remembering that petrol is pretty thin) it could pass through the rings and into the crank case.

Brand and grade of oil is a subject and a half. If you are not racing then any quality car oil will be fine. The range you mention will be fine just change it regularly (there is no filter) and you will be ok.
