Ian take a look at the Ven 05 floating disk, It does not have the associated 'rattle' problem that you mentioned. The disk is mounted on 5 'top hat' bobbins similar to the way modern super bikes have their front disks mounted and hence they suffer little if any 'rattle'.
What you say about the disk fidgeting can also be true but this is minimised by the method used on the Ven 05. However, proper maintenance is required to ensure the disk floats as intended. i.e. keep it clean and free from brake dust, which of course should go without saying but sadly I have heard many complaints of poor performance from some karters who cannot seem to grasp fully the value of preparation, not only with brake systems but other aspects of kart prep too.
