One reason why you were not 'told' a floor tray thickness is simply because there IS no definitive 'best' thickness that will be the SAME for ALL karts and conditions!
The stiffness of your chassis affects the way it handles. The stiffness of the floor tray CAN be a significant addition to this. Some karts are made 'too floppy' for 'perfect' handling and some karts are too 'stiff' for 'perfect' handling. If you put a stiff floor tray in an already TOO stiff kart, the handling can get WORSE. But, that same floor tray in a too-floppy kart will IMPROVE the handling.
For us to give you the 'right answer' we'd have to know ypur kart, your driving, the way you like it set up, the age of the kart, the conditions (wet, warm, cold, dry, etc.) and so on.
Secondly, the number and depth of the 'bends' in the tray affect the stiffness. As does the way in which it is mounted. If you bolt it straight to the chassis, it's be stiffer than if you mount it with rubber washers (tap washers) between the tray and the chassis.
So.... the answer is, make at least TWO of different thicknesses and try them. Also, try the different mounting methods (washered or not). Make sure it is sufficient strength to keep your feet safely off the floor in all conditions and that it leave no 'holes' at the sides where you foot may 'fall through'.
