I'm interested in the minimum running temperature. With the latest radiator, at this time of year it's a doddle to keep the temperature below 50 but I've always masked and used the flap to keep in the 50 - 55 window.
My first Rotax engine only used to 'wake up' when it reached 60 degrees (was terrible until it reached that so I used to spend the first two laps of a sprint race going backwards). Not sure if that was something specific to the builder (Ogden) but have run engines built by Zip North, NJR and HRS sinse and these all ran perfectly at lower temperatures. The carb on the Ogden engine also had a large float height (6mm if I remember correctly) so it may have been something to do with that.
Regarding temperature sensors, if using an Alfano, I used a Kart Krazy one last time out and I'm not convinced the reading is the same as the standard Alfano sensor. Not sure if it has anything to do with the Kart Krazy one sitting out of the coolant flow due to the tapered thread but I wasn't happy with the readings all day so have reverted back to an original Alfano sensor.
