Thanks for the suggestions davidmc and RSBW. So if the problem is fuel starvation (seems to make sense to me) then aside from dirt clogging up the system what else could cause fuel starvation? Could the fuel pump cause it? The blue pulse pipe is very worn and one of the crankcase seals looks very worn although the engine compression feels very good. Would it be possible that worn engine seals could affect the fuel pump at higher revs which leads to fuel starvation?
I am trying to work out why it starts working again when I take the carb apart and I'm wandering if it's because I am drying out the fuel pump which is effectively resetting everything but maybe the fuel pump isn't working properly due to the blue pulse pipe / worn crankcase seals or perhaps a worn diaphragm and after a short amount of running the proplem starts to show itself.
Also I've heard a lot of people slate the inline filters, one person is highly respected within the sport, what is the problem with the inline filters? Is it proven or is it a myth?
I've just bought an ultrasonic cleaner and I'll be cleaning them all in it and I'll remove the jets completely.
