plug does seem to get wet very quickly = flooded imo. Try smelling the exhaust pipe too, If it smells strongley of petrol it could well be flooded! If the plug is wet without using choke it's flooded.
Plugs sometimes they will not spark under pressure but will spark when held on the engine.
Have got springs fitted on you needles?
Wind your needles in (not too tight)and start again. Carb settings:- Start with just over one full turn open (65min) on the high jet and go from there. We run at 62 mins open and have no temp issues. Your carb will be different but this is not a bad start point and on the safe side from a temp point of view.
work with ambient plus 175 deg your engine temp.
As for plug gap? I use them out of the box no issues my plug is a light coffee colour and I give it a squirt of carb cleaner and a wipe now and then.
