WTP Carb Pressure

Hi, can anyone help. started the kart today and worked fine blasted a few laps round the courtyard pulled myself and then my mechanic around.

But after it sat still for a while the fuel dropped from the carb and have to build the pressure up again by removing spark plug and choking and then replacing the plug. It starts when i do this but we are due to go testing soon and dont fancy panicking on the dummy grid.
the long and short of it is, is this a common problem.
My mechanic has rekitted the Carb but im starting to doubt he's done it correctly. could it be anything else ?
