Performance wise the X30 is quicker than the Max on the Komet tyre, I would thing they would be similar on the same tyre, although I haven't personally made the test myself, no need to. For me the Komet is a far better tyre than the Mojo in terms of balance.
As Andy has mentioned they are far more responsive in the bottom, lack a little mid compared to the Max but have a lot more top. Where the Max hits a brick wall the X30 keeps singing and it is very satisfying.
I am not sure what the recommended service interval is, I know people that are well over 10 hours without having the motor looked at. For me personally I had a top end service done at 6 hours from brand new and just had a complete rebuild done at approx. 10 hours. The complete rebuild on 2 motors cost me £1,300.00 + VAT for BOTH, very happy with that.
The X30 uses twice as much oil, where as the Max uses 100ml per 5 litres the recommendation on X30 is 200ml per 5 litre.
Yes the carb is like that of a TKM where it is adjustable on track. Cant comment on the Walbro's of today as only used one in JICA 15 years ago! I haven't found the carb to be at all critical and it is of course good to be able to rectify any carburation issues whilst out on track rather than in the pits after the race, of course then hoping to have got it right for the next time out.
