"When last stripped down the engines internals look as good as new what sort of problem is glycol based stuff supposed to cause? "

Uninhibited glycol causes accelerated corrosion in aluminium parts particularly if there are also ferrous (steel) parts in the vicinity.

In the 'old' days one could buy uninhibited anti-freeze because most blocks and cylinder heads exposed to coolant were cast iron. However most antifreeze now seems to be inhibited because ali blocks or cylinder heads are common.

The other factor is that most engines etc don't stay on the kart for too long, they are removed and drained of coolant enough for the effects to be quite small.

Even if the engine was running uninhibited and the coolant was left for long periods, you probably wouldn't see any damage unless you used a camera to inspect the coolant spaces in teh engine....or got pinholes in your radiator.
