You are all correct. My advice is as follows:

Carb needle - Circlip in the centre slot and don't touch it again unless you are sure of what you are doing.

Main Jet Too Lean - If it pops and 'chinks' on the main straight you are too lean. However, this may happen once or twice on the first run of the day. If it pops all the time then richen up (Bigger number on the jet means a bigger hole through it and therefore richer.

Main Jet Too Rich - The engine will not sound loose on the stand (Don't run it for too long without any load) IOf it is really out then you probably won't acheive more than 12K rpm. Put a jet in with a smaller number.

Main Jet How to check - In the good old days of 100CC then you could chop the engine and see what the state of the plug was. Unfortunately as the plug on the max is so long fuel can hide up inside the plug and drip down by the time you get back to the pits and give you a faklse reading. I always use a torch and look in to the top of the engine with the piston at the bottom of the stroke. (Use the starter rine with your fingers to rotate the crank, perhaps disconnect you battery for safety reasons). If the mixture is correct the the piston should be dry on the top and moist around the edges. Try to stop the engine as soon as you can in parc ferme. You won't get a good representation if you run it on the stand. At the end of the day following practice and MAKING NOTES OF WHAT THE CONDITIONS ARE AND WHAT WORKED you will find out what is best for YOUR engine.
