Check the batteries on the instrument and also the lead as if it is cut,worn or shorted it will make it read silly readings and is a common problem. 100deg is thinking it should of stopped but as stated check the water pump.You should of lost alot of water at that temp and it would be boiling really.
You have checked the sensor also check the sensor in a boiling jug to check that it is reading correctly.
